Ok so this is an Irish recipe which is now served in pubs across the UK. I make it as one of the Thanksgiving pies because I get so many requests for it. It is sticky and messy, buttery and creamy and thoroughly bad for you. What's not to like?
BANNOFI PIE
(Banana-Toffee Pie)
Serves 8
10 oz butter/275 g butter
9 oz/250 g graham crackers or ginger cookies crushed to crumbs
6 oz/150 g sugar (caster or fine sugar preferable)
1 can condensed milk (about 14 oz /397 g)
2-3 bananas
1/4 pint/150 ml whipped cream
Grated chocolate or chocolate powder to decorate - must be good quality!
In a large saucepan, mlet 4 oz/ 100 g of the butter and stir in crush biscuits. Press into a loose bottom cake/tart/flan tin (7 1/2 in/ 19 cm). Chill for 30 mins.
Place the remaining butter and all the sugar in a heavy based saucepan and stir over a low heat until all the butter has melted. Add the condensed milk and gently bring to boil stirring continuously. Boil steadily for exactly 5 minutes stirring the whole time to avoid burning. The mixture should now be light caramel in color. Pour it over the biscuit/cookie base and chill for one hour.
When ready to serve, slice bananas over the top and cover with whipped cream. Sprinkle chocolate over the top and serve.
Heaven! It is absolutely decadently delicious! Next up will be Pavlova with summer fruits..I will be back with that delicacy xx
