Ingredients:
- 1 organic chicken 4.5-5 lbs
- 2 tablespoons of harissa (more for serving if required) Just buy a jar unless you want to roast chilies for hours in preparation. (I say life's too short)
- 1 pickled lemon (these are easy to make yourself but require a month's notice - otherwise buy a jar from a good middle eastern supplier - Amazon.com has several. Failing that sub a fresh lemon for the pickled one)
- 2 tablespoons of olive oil
- Salt to season
Oven Temp 450 degrees F
Wash and dry the chicken well - inside and out.
Cut lemon in half and rub skin with it. Rub olive oil over chicken and follow by smearing the harissa over.
Sprinkle with salt and place in a deep baking tray breast-side down.
Leave in oven for 1 hour without opening door of oven.
Remove from oven and allow to rest for 20 mins.
Roasted Sweet Potatoes with Pecans and Jalapenos
Ingredients:
- 6 sweet potatoes
- Half cup of raw pecans
- 2 jalapenos
- 2 tablespoons of honey
- 2 tablespoons olive oil
- Salt
Method
Peel and cube sweet potatoes into rough one inch cubes. Toss with olive oil and honey. Sprinkle with salt and cook in oven at 375 degrees F for 40 mins.
Chop jalapeno and add to the sweet potato along with the pecans and allow to cook for another 5-10 minutes. Le voila!
